Karnataka is a big state, so there isn't one way to cook its food. The food changes from region to region, and then again from family to family. My understanding comes from the kitchen I grew up in Bangalore. I learnt by watching my mother and aunts cook - cutting vegetables, making mensinpudi, tasting saaru and learning that sometimes a dish needs another minute, not another measurement.
It starts with the season
Growing up, we didn't call it seasonal cooking. We simply cooked what was available. Avarekalu had its time. Mangoes had theirs. Some vegetables appeared for a few weeks and then disappeared until the following year. I still cook that way at Anvaya. I handpick the vegetables and let what's good that week influence the menu.
The food is meant to be shared
This is also why a supper club feels right for the food I cook. At Anvaya, I don't serve a long menu where everyone orders something different.
I prepare one seasonal meal for up to eight guests, who sit around one shared table. A palya might be tasted with the saaru. A gojju might make sense only when you eat it with something else on the plate. The meal is meant to come together.
And the small things matter
The way a vegetable is cut. How a spice is roasted. When the tempering goes in.
How much tamarind is needed that day. These aren't always things you find in a recipe. They're things you learn by cooking. I make my own spice blends and prepare every Anvaya meal myself. That's important to me - not because I am trying to make the food more "authentic", but because this is how I learnt to cook.
And that is what I want to share at Anvaya. Not a textbook version of Karnataka food.
