What Is Anvaya? Everything You Need to Know About My Karnataka Supper Club in Thane

Anvaya didn't come from a business plan. It came from my mother's kitchen back in Bangalore - rice, ghee, the sound of tempering hitting hot oil, someone telling you to eat more before you've even finished. That was never a "concept." It just happened, every single day, because that's what a home does. I grew up inside that, and at some point I stopped wanting to just remember it and started wanting to feed people with it.


Anvaya is that kitchen, put back on a table. Literally - one table, eight people, every Friday, Saturday and Sunday, at my place in Thane.



So what exactly is Anvaya?


Anvaya is a private home dining experience; a supper club serving Karnataka Smartha Brahmin cuisine. That's a specific culinary tradition from Kannada Brahmin households: no onion, no garlic, everything built on ghee, tempering, and produce that's actually in season, not whatever's sitting in cold storage.


Here's the part people miss: Brahmin cooking is the method, the discipline - the hing in the dish. It's what makes the food precise, restrained, deliberate. But the flavour, the actual character of what lands on your banana leaf, comes from Karnataka itself -Bangalore, Mysore, Sringeri, each with its own hand. Bangalore's everyday saaru and huli. Mysore's sweeter, richer touch - think Mysore Pak done properly. Sringeri's older, more austere temple-style cooking, closer to the source. If Brahmin tradition is the hing, Karnataka is the vegetable - the actual substance you're eating. Anvaya sits at that intersection, drawing from all three, not flattening them into one "South Indian" idea.


The name itself is Sanskrit/Kannada - ಅನ್ವಯ (anvaya) ; and it means continuity, lineage, an unbroken thread. Every dish on the table is something that's been cooked in a family kitchen for generations, mine included. I'm not inventing a "concept." I'm just not letting the thread drop.

It's a must-try, do-it-once-and-you'll-understand kind of evening, for both regular days & special occassions.



How an evening at Anvaya actually works


We seat eight guests, one table. It's a full tasting, set for that day, inspired by whatever's seasonal. You arrive by 6:45pm, dinner is served on a banana leaf starting 7:00 pm on friday, and honestly, the best thing you can do is show up hungry and without a plan.

This isn't a restaurant. It's a home cooked meal, the way it would be for family, prepared fresh that morning - with handpicked vegetables & seasonal produce.


What makes the food different


A few things I won't compromise on, because they're the entire point:


Every spice blend is made in-house. No store-bought masala, no frozen food.

The ghee is homemade - from butter collected and clarified over time, with bilona method

Vegetables come from local markets, hand-picked, not ordered off a delivery app.

It takes longer. It costs more to run this way. But goal is to serve clean, wholesome food that I would actually feed my family & myself.

  • Is Anvaya vegetarian?

    Yes, fully vegetarian, no eggs, no onion-garlic. If you're looking for a genuinely traditional vegetarian fine-dining experience in Mumbai or Thane, this is built for exactly that.


  • How much does it cost?

    ₹1,800 per person, which covers the entire set menu and beverages. No alcohol is served. Full payment is required at the time of booking.


  • Where is Anvaya located?

    We're based in Brahmand, Thane West, off Ghodbunder Road. The exact address is shared with guests once payment is confirmed.


  • Do I need a reservation?

    Always. We don't take walk-ins. Reserve through the website or WhatsApp us on +91 7406319391, and we'll confirm availability and send a payment link within 24 hours.


  • What if I have allergies or dietary restrictions?

    Tell us at the time of booking and we'll do our best. Once the evening is underway, though, we can't make changes on the spot - the whole meal is cooked as one sequence, for one table.


  • What's your cancellation policy?

    Cancel more than 48 hours out and you'll get ₹500 per person back. Inside 48 hours, or a no-show, isn't refundable. Rescheduling works fine with 48 hours' notice.


  • Can I book the whole table for a private event?

Why I built it this way


I could have opened this as a restaurant. More covers, more revenue, less heart. But the entire reason Anvaya works is because it's small enough that I can still cook every dish, greet every guest, and know that what's going out on that banana leaf is exactly what I'd serve my own family. Eight people. One evening. That's the whole model, and I'm not scaling my way out of it.
